Baked Mackerel

I think mackerel is very underestimated, but honestly, this is the best fish for flash cooking and perfect taste. You will also enjoy more meat than bones 🙂 This is my never-ending problem when eating fish, too many bones!

Anyway, this week I prepared mackerel fillets by cooking them in the oven for 10 minutes. Nothing spectacular here, but I have combined some veggies in a frying pan with some Mediterranean flavours which would go on top of the fillets. After the fillets are embellished with this combo, leave them for 10 more minutes in the oven.

What you need for the tasty combo is spring onions, red peppers, fresh basil, parsley, lemon zest, lemon juice, thyme, ginger, butter, salt & pepper. Chop all of these and fry them in butter for no more than 10 minutes, just to soften and to release all the flavours. Additionally you can add gaDSC_4455rlic or use chili peppers to spice up.

This 20 minutes fishy business will definitely please your taste buds, I tell you.. I would have eaten like 10 of these fillets 😀
