Summer is here, yaay! Since it’s the season to be jolly with so many fruits around, I bought today some sour cherries from the local market especially for this oh so sexy and tasty sponge cake with sour cherries. Besides the sour cherries, to bake the same you will need: 2 eggs, 150 gr caster sugar, 200 gr flour, 125 ml milk, 100 gr fat butter, baking soda, vanilla extract and a pinch of salt.
In a bowl mix the warm butter with the sugar and then add the eggs, vanilla extract and salt. Then you need to add half of the flour and half of the milk and mix again so you can reach an even dough. Add the remaining flour together with the baking soda and the remaining milk. Incorporate everything and the dough is done.
Wash the sour cherries and remove the pits. You should also pre-heat the oven @ 180 Celsius. Pour the dough in a tray and add plenty of sour cherries and keep in the oven for 40 minutes.
You will get yourself a perfect fluff sponge cake with a refreshing twist of sour cherry. Pure love!
