After a looong break, I am back with a healthy recipe of banana bread. I have baked this so many times, but I was always using baking powder. This time I baked it without it to reduce the chemicals 🙂 It does not look so good, the puffiness is way down, but the texture is more moist than other banana breads that involve baking powder.
Ingredients needed for this super fast desert: 2 eggs, 3 bananas, 150 gr butter, half a glass of brown sugar, 2 glasses of white flour and some walnuts.
First you need to mix the butter with the sugar, add the eggs and keep mixing the ingredients together. Add the smashed bananas and then incorporate the flour. This is the time to include baking powder, if you decide to use it.
Put some walnuts in the dough before you prepare the tray for the oven. In the meantime, make sure your oven is pre-heated at approximately 180 Celsius. Grease the tray with butter and then pour the dough. It has to be kept in the oven for almost 20 minutes, until it becomes brown on top. If you are not using the baking powder, the volume of the banana bread won’t increase too much. If baking powder is used, the volume of the cake will be doubled.
This is like a 15 minutes business, low on sugar and super healthy. Enjoy baking and eating it! I sure did 🙂
