My favorite fruity cake is the one that is made with lemon. So I am very happy to share with you a very simple and tasty recipe for lemon cake. The texture is very silky and moist and the lemon in the mix gives nothing but delight to your taste buds.
The ingredients to be used are the following:
2 lemons (juice and zest)
4 fresh eggs
5 tbsp sugar
3 tbsp sunflower seed oil
3 tbsp water
1 pinch of salt
10 grams of baking soda
200 grams white flour
Use the zest from the lemons and mix it with the egg yolks, sugar, salt and oil. In a separate bowl whip the egg whites until you have firm foam and keep it on hold for a couple of minutes J You will use this foam in the end to perfect the consistency of the dough.
Getting back to the yellow composition – add the lemon juice together with baking soda on top and mix all the ingredients together. Now is the time to add the flour and the water. Give them a good mix again, make sure the flour is well incorporated in the mix.
We are almost there.. what you need to do now is to combine the white and the yellow in one perfect mixture. You should do it through gentle moves, making sure that the foam will help your cake to be spongy and airy inside.
Pour the deliciousness in a butter-coated tray and let it rest in the oven for 45 minutes at about 180 Celsius.
